Loved the episode. One question though: How important would you say having a blog is for a startup nowadays, and how many posts do you think a startup should be putting out in order to attract new clients/users?

Blogging is still very important but it's quality over quantity. My recommendation is to start with 1/month and then increase frequency if you can.

One way to easily find the right topic is to use a tool like aHrefs to find content that ranks for the key phrases you'd like to rank for - then create better content than the top few results.
